Made from a type of wheat, known as “Khorasan” or “Kamut”, that is held in high esteem in the kitchen, processed using artisan methods, bronze-drawn and dried at a low temperature. It contains a greater quantity of protein and mineral salts than other types of semolina. Ideal served with all the sauces.
