Ingredients

Serves 4 :

 

250 g. spelt flavoured tagliatelle
1 fresh and tender sausage
2 shallot onions
200 g button mushrooms
1 laurel leaf
1 clump of parsley

2 spoonfuls of tomato pureé
Salt and chilli to taste
3 spoonfuls of extra virgin Olives oil

Preparation

1)      Peel the sausage, crumble and brown in a non-stick pan without adding any fat. Then put aside.

2)     Remove any earth from the mushrooms, peel and chop.

3)      Peel the shallots, finely chop them and then brown them in the same pan with a spoonful of oil. Add the mushrooms and the laurel and cook over a high hear for 5-6 minutes, allowing the water to evaporate. Remove the laurel and add the sausage, the two spoonfuls of tomato pureè and cook for another couple of minutes. Season and add the chilli.

4)      Cook the pasta, drain when cooked and heat in a pan with the sauce. Finally season with the chopped parsley and the remaining Olives oil and serve immediately.
